Sausage Egg and Cheese Croissant Recipe

The Appetite - Bring it!
One way to start your day off on a good note is to have a sausage, egg and cheese croissant for breakfast. This is a great breakfast on your day off or when you're on vacation. So bring a cup of coffee, the newspaper and an appetite. You're going to need an appetite because this ain't no quiche. So get your cook on and let's make a sausage, egg and cheese croissant.

The Sausage
Fry sausage patties or links on the kitchen range in a frying pan. Plan to make two sausage links per croissant. Serve the sausage whole or chopped into smaller pieces (about the size of a nickel). Now put the sausage aside while you prepare the other ingredients.

The Omelet
Make an omelet for your sausage, egg and cheese croissant on the kitchen range. Scramble the eggs and then let them cook slowly with out any further scrambling. The eggs should be one piece when they're done cooking.

Add in shredded cheese, onions, mushrooms and chopped sausage while the eggs are cooking. Don't add the chopped sausage at this point if you prefer the whole patty. Try adding a dash of salt and/or pepper while the eggs are cooking.

The Serve
Spread mustard on the inside of the croissant to give it a little added flavor. Use a spatula to place the omelet on the bottom half of the croissant. Place a sausage patty or links (you can skip this if you've added chopped sausage earlier) inside the omelet and fold the omelet over the sausage. Now place the top of the croissant on top and sprinkle shredded cheese on top of the croissant.

There you have it. You're ready to enjoy a sausage, egg and cheese croissant. Hint: This works with country ham also. Bon appetit!

The Wonders of the Pressure Cooker

I must admit that for years I was afraid of pressure cookers! My mother used hers religiously back when I was a kid, but I think the constant warnings to "stand back" and "do not touch" made me afraid to have one. It also didn't help that it was constantly jiggled, hissed and let out steam in every direction. After doing some online research it seems that I'm not the only one who had a pressure cooker phobia growing up.

All this changed about two years ago when I started my Personal Chef business. I needed to speed up the cooking process on some of my favorite dishes. I knew that a pressure cooker would be the solution so I had to take the plunge and purchase my first pressure cooker. I will let Alton Brown do what he does best and explain the mechanics of pressure cookers and the types available.

Now, I honestly don't know what to do without my pressure cooker. It's great for last minute food preparation and allows me to put a meal on our table in less than hour. Cooking rice the traditional method takes about 20 minutes; however with a pressure cooker rice is ready in less than 7. That's great news for impatient cooks like me! I think every cook should learn how to use one as it's such a time saver. You can put any type of meat, including cheaper tough cuts in there and it will be cooked quickly and will be tender and flavorful. The newer models are so safe, easy to use and you can pick up a good one for less than $60.

A few nights ago while shopping for groceries I found beef brisket on sale. I thought of all the possibilities for the brisket, but settled on brisket sandwiches made with fresh Italian bread, topped with tomatoes and avocado and served with a light potato salad. Normally, a beef brisket would take about 3-4 hours to prepare. Using my pressure cooker, it only took about an hour.

Parsley - Not Just A Garnish

Parsley has been known since the ancient Greeks, and before. It was recommended by the father of medicine Hippocrates as a cure for many ailments. Ancient Greeks used it in a wreath for crowning the winners of sporting events and hung it on tombs. The name parsely comes from two greek words, petros and selinon which literally translates as rock celery, no doubt because this herb originally grew wild on the rocky coasts of the Mediterranean Sea.

It was used as a medicinal herb long before it was eaten. It was used to control blood pressure, a tonic to strengthen the bladder, was rubbed on mosquito bites to stop itching, and many other uses. There is evidence in medieval Europe of parsley being used as a food, and also being worn around the neck to absorb food odors and as a poison antidote.

There are two main varieties of leaf parsley; curly leaf and flat leaf. The flat leaf or Italian Parsley has a bit stronger flavor and is mostly used in cooking. The curly leaf is used in cooking and as a garnish. Parsley has a fresh, earthy flavor and is good in rice and potato dishes, in salads, in soups and stews. And of course, as a garnish on dishes that can be eaten as a breath freshener after the meal.

Which to use, fresh or dried parsley? With many herbs, using dried versus fresh is a matter of using less of the dried because of the concentration of flavor. With parsley, fresh flat leaf parsley has the most flavor and should be used whenever possible. Dried parsley is very mild.

London Broil - How to Cook a London Broil

London broil is a method used to make the tougher cuts of a beef tender. Labeling a cut of meat as a "London Broil" is incorrect as the term does not mean any precise cut of a meat, but it is a procedure of preparation. However, in the grocery store, you will often find a package of meat labeled London Broil. This is actually a thickly cut piece of top round.

Tenderizing

Tenderizing is a good way that can help make the finished product more tender and assist a marinade in penetrating the meat. The meat tenderizer is a hammer like kitchen instrument. Make sure that the meat is cold, even close to frozen during this process. Beat the meat with the hammer until it became well indented then flip the meat and repeat.

Marinating

After tenderizing, marinating the meat is the next best step. There are different ways to do this. An easy way is to just to salt the meat, wrap it and leave it in the refrigerator for 3 hours. Another way to marinate is to use a flavored marinade. Most recipes suggest an onion-garlic marinade. Here is an example:

half large onion1 head of garlic (about 5 cloves)1 cup red wine (or vinegar or white wine)Salt and pepper to preference

Season the meat on both sides with salt and pepper to taste and insert it into an air-tight plastic bag. Add the marinade. Refrigerate for 24 hours.

Cooking

Roast - Place the marinated London broil in the pan and place it on the center rack of the oven. Let the meat cook on each side for about 15 minutes. The London broil is at its best when it has been roasted to a medium rare, or to an internal temperature of 140 degrees. Use a meat thermometer for checking the temperature.

Grilled - Cutting the meat is the most important step before grilling. It is advisable that the meat is about 1-2 inches thick, and you must trim off all fat. Ensure that the meat is tender by marinating before grilling. Grill to a medium rare. Once done, thinly slice the steak at a 45 degrees angle.

Broiled - It is recommended that before broiling the meat, brush it with Worcester sauce. For a medium rare London broil, cook each side for at least 6 minutes. Make sure not to overcook it as it may cause the meat to be hard and tough.

Pan Fried - Remove the steak from the refrigerator at least 2 hours before you fry. Let it cook for 2-3 minutes on each side and make sure that it is golden brown. The steak should be cooked to medium rare as additional cooking will make the meat tough.

These are just a few ways to cook a London broil. Everyone you ask will have a different method and you should try several to see which one is the best choice for you. The main thing is not to overcook the meat so that it stays tender and juicy.

Cooler Weather, Warmer Foods

As summer gives way to autumn, it becomes important for us to make appropriate changes in our diet to support our bodies in the cooler weather. While cooling foods like salads and other raw vegetables are good for our bodies during the hot weather months, once the outdoor temperature begins to fall, we need to incorporate more warming foods, such as cooked vegetables, soups, and stews into our daily menus. This helps our body in many ways, especially when we look at the digestive processes from a Chinese medical point of view.

In Chinese medicine, the process of digestion utilizes a great deal of metabolic heat (digestive fire) to break down, absorb, and integrate all the nutrients from our food. Because of this, our digestive organs (the spleen and stomach in Chinese medicine), are highly susceptible to the pathogenic influence of cold. If we collect too much cold in the digestive system, we don't process and absorb the nutrients from our food efficiently. In addition, we might also get unpleasant physical symptoms such as abdominal pain, cramping, bloating, gassiness, constipation, or diarrhea. By keeping the relative balance of cold and heat in check in the digestive system, everything flows much more smoothly, and our bodies are able to function optimally.

Acupuncture and Chinese herbs are, of course, very supportive to the digestive processes in our body. These modalities can help regulate digestion and elimination, as well as normalize metabolism. Dietary therapy, however, is a crucial part of maintaining the balance that we achieve from therapies like acupuncture. This is why dietary therapy, along with acupuncture and herbal medicine, is one of the very important branches within Chinese medicine.

Many of my patients have been asking for another recipe, and this seems like the perfect time to share one of my very favorite stew recipes. During fall and winter, I think I make this stew about every other week because I love it so much. I hope you enjoy this one as much as I do!

QUICK SAUSAGE, WHITE BEAN & SPINACH STEW

1 tsp olive oil

2 medium onions, thinly sliced

Salt

Freshly ground black pepper

1 Tbsp fresh thyme, chopped and divided OR 1 tsp dried thyme, divided

1 Tbsp fresh rosemary, chopped and divided OR 1 tsp dried rosemary, divided

2-4 cloves garlic, minced and divided

1 lb sweet or hot sausage cut into one-inch chunks

1 (19 oz.) can white cannellini beans, rinsed and drained

cup dry white wine (I use cooking sherry)

cup chicken broth

3-4 roma tomatoes, cored and cubed OR one can peeled, diced tomatoes

Hot pepper sauce

1 bag baby spinach, stemmed and coarsely chopped

Heat the olive oil over medium heat in a large soup pot. Add onions, salt, pepper, half the thyme, half the rosemary, and half the garlic. Cook for 4 minutes, stirring frequently.

Put sausage in a skillet and cover with cup water. Cook over high heat 8-10 minutes, or until the water evaporates. Remove the sausage from the skillet, and add to the soup pot with the onions in it. Brown all lightly - about 4 minutes. Add beans, wine, broth, tomatoes, and a dash of hot pepper sauce. Add remaining thyme, rosemary, and garlic. Reduce heat and simmer for 4 minutes. Add spinach and cook an additional 15-20 minutes until the sauce is somewhat thickened.

Serve with a crusty baguette and ENJOY!

A Healthy Recipe: Substantial Breakfasts

It's morning. Time to get up. After getting dressed, brushing your teeth and combing your hair, your first thoughts are of the report due at work. Or the homework you didn't get finished last night. NO! You should be thinking "I'm hungry!" What's for breakfast? Good you are on the right track since breakfasts are the most important meals of your days. Your food tank is empty and it needs refueled. Otherwise you will be inattentive, draggy and darn hungry.

Breakfast doesn't have to be a long drawn out affair. Even a quick one will work if it is planned right. A simple one is that English Muffin tucked away in the back of the cabinet, split then toasted, buttered and topped with cheese if you are really in a hurry. If you have a little more time, add a scrambled or fried egg (in a non-stick pan minus the butter or oil) and voila! A glass of milk or juice and you are out the door. Yes, this can be portable as well.

Even a slice of toast with peanut butter (and jelly?) and a glass of milk will suffice for another quick 'recipe' for breakfast. Hot oatmeal with fruit on top or a small spoonful of raisins and cinnamon is yummy. If you don't like oatmeal, how about cream of wheat with brown sugar and milk and a blueberry muffin. Add fruit juice and your good to go.

If you have ample time, like on the week end, a more leisurely breakfast of maybe waffles, whipped cream (low fat) and strawberries would be good, with a serving of Canadian Bacon or sausage on the side and perhaps scrambled eggs. Or applesauce pancakes with maple syrup, fried egg (in no-stick pan) and skim milk. Yum. Tasty but healthy too.

Those breakfasts that we have discussed so far have been pretty traditional, some even quick and easy. For a few more non-traditional breakfast meals, continue reading. Omelets filled with a variety of vegetables such as mushrooms, green and red peppers, minced onion and cheese are among the not so common foods for breakfast. Add a toasted bread of your choosing, juice and milk and you're a happy camper.

Perhaps you had a little get-together last night. There's a little pizza left over, so don't believe those that say pizza cannot be healthy in the morning. Yes it is. Containing grains (crust), veggies (tomato sauce on the crust) plus a little meat of choice and a serving of cheese (dairy). Who says pizza is not good for you. Anytime.

French toast is a tasty and easy breakfast. Mix an egg and a cup of milk with a dash of sweetener of your choice and nutmeg. Dip four slices of bread quickly into the blend and fry lightly in a dab of butter. Serve with jelly or syrup.

The bottom line is, breakfasts are the most important meals of the day. Don't miss them when there are all these wonderful ways to prepare them, quickly or at a more leisurely pace.

Here are the ingredients and instructions to make this for your family:

Ingredients
3/4 cup cold fat-free milk
1 package (1.4 ounces) sugar-free instant chocolate pudding mix
2 cups fat-free vanilla frozen yogurt, softened
1/4 cup reduced-fat chunky peanut butter
2 cups plus 2 tablespoons fat-free whipped topping, divided

Directions
In a large bowl, whisk milk and pudding mix for 2 minutes. Stir in the frozen yogurt and peanut butter until blended. Fold in 1 cup whipped topping. Transfer to an 8-in. square dish coated with cooking spray. Cover and freeze until firm.

Remove from the freezer 10 minutes before serving. Cut into nine squares. Garnish each with 2 tablespoons whipped topping
